Ingredients:

2 lb Yukon gold or red potatoes, whole, unpeeled, scrubbed
1/2 tablespoon olive oil
8 oz Turkey Bacon, chopped into 1/2-inch pieces
1/2 medium red onion, diced
3 garlic cloves, minced
2 tablespoons dill, finely chopped
2 tablespoons parsley, finely chopped
Dressing Ingredients:
1/4 cup chicken stock or vegetable stock, or water
1/4 cup apple cider vinegar
2 tablespoons Dijon mustard, stone ground mustard, or whole-grain mustard
1 tablespoon sugar or honey, or to taste
1 teaspoon fine sea salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
