Philly Cheesesteak

1. Season the thinly sliced ribeye steak with salt and freshly ground black pepper.
2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced steak and cook until browned and cooked through, about 5-7 minutes. Remove the steak from the skillet and set aside.
3. In the same skillet, add the remaining olive oil. Add the sliced onion and green bell pepper (if using) and cook until they are tender and caramelized, about 7-10 minutes.
4. Return the cooked steak to the skillet with the onions and peppers. Stir to combine and cook for an additional 1-2 minutes to heat through.
5. Preheat your oven broiler. Place the hoagie rolls on a baking sheet, split sides up. Arrange 2 slices of Provolone cheese inside each roll.
6. Place the baking sheet under the broiler for 1-2 minutes, or until the cheese is melted and bubbly.
7. Remove the hoagie rolls from the oven and fill each roll with the steak, onion, and pepper mixture. Serve immediately and enjoy your Classic Philly Cheesesteak!
