1. Heat a cast iron skillet or grill pan over high heat until smoking hot.
2. Sear the steak for 3–4 minutes per side to develop a deep brown crust.
3. Add butter, garlic, and herbs to the pan during the final minute, basting the steak with melted butter.
3. Finish in the Oven
1. Transfer the skillet to a preheated oven at 375°F (190°C).
2. Cook for 10–15 minutes, depending on your desired doneness:
• Rare: 120°F (49°C)
• Medium-rare: 130°F (54°C)
• Medium: 140°F (60°C)
3. Remove from oven and let rest 10 minutes before slicing.
4. Serve
Slice against the grain and drizzle with the buttery pan juices.
Serve with mashed potatoes, roasted vegetables, or mac & cheese for the ultimate steakhouse experience.
